Preparation

  1. Egg Sando

    • Whisk the eggs, milk, and bouillon together and strain into an appropriately sized baking dish lined with parchment paper, topped with green onions.
    • Cover the dish with foil, place in a water bath and bake in an oven preheated to 350 F for 30 mins or until it’s cooked.
    • Combine the chorizo and pork in a bowl and season with salt and pepper.
    • Cook sausage in patty form until crispy on both sides. Remove from the pan and top with hot honey.
    • Build the sandwiches to your liking.
  2. If Making Tacos

    • Render the sausage in a pan until crispy, stir in the eggs and cook to your liking. Season with salt and pepper. 
    • Build tacos with a slice of american cheese on the tortilla (melted), hash browns, topped with the chorizo eggs, avocado and pico de gallo salsa.
