  • paneer cheesecut into 1 inch cubes 1.5 lb
  • Vegetable oil 2.0 Tbsp
  • Cumin 2.0 tsp
  • Chili powder 2.0 tsp

Vegetables

  • Zucchini, diced 1.0 each
  • Squash, yellow , diced 1.0 each
  • Red onion, sliced 0.5 each
  • Vegetable oil 1.0 Tbsp
  • Garam Masala 2.0 tsp

Preparation

  1. Rice

    Make rice in rice cooker as per manufacturers directions.
  2. Dal

    Sweat garlic and ginger in oil until fragrant . Add curry powder and cook another 20-30s.Add lentils and water . Bring to a boil, then reduce to a simmer . Simmer 35-45m or until lentils are tender, stirring often and adding water if needed.
  3. Paneer

    Toss all ingredients together .Roast @ 425 degrees until cheese is browned.
  4. Vegetables

    Toss all ingredients together . Roast @ 425 degrees until vegetables are browned.
  5. Sauce

    Combine all ingredients and let rest at least 30m for flavors to marry.
  6. Assembly

    Place rice in bottom of bowl .
    Top with dal. 
    Over dal, place paneer and roasted vegetables.
    Drizzle with sauce.
