Preparing the chicken

  • Chicken breastcut into bite sized pieces 2.0 lb
  • Buttermilk 1.0 cup
  • Saltdivided 2.0 tsp
  • Black Pepper 0.5 tsp

  • Garlic powder 1.0 tsp

Assembling the bowl

  • Rice, white, cooked 10.0 cups
  • Cabbage, shreddedgreen and red 4.0 cups
  • Carrotspeeled and shredded 2.0 each
  • Dill picklesthinly sliced 1.0 cup

  • Red onionspickled 1.0 cup

Crunchy, golden-fried chicken is tossed in spicy honey and served over fluffy rice with crisp vegetables. A drizzle of chipotle mayo adds the perfect creamy kick.

Preparation

  1. Preparing the chicken

    35 minutes
    • In a large bowl, combine the cut chicken, buttermilk, 1 teaspoon salt, pepper, paprika, and cayenne pepper. Let sit in the refrigerator for 4-24 hours.
    • Remove the chicken from the refrigerator. In a separate large bowl, combine the flour, garlic powder, onion powder, and 1 teaspoon salt.
    • Heat the oil in a large Dutch oven or deep fryer to 350°F. Working in batches if needed, dip the marinated chicken pieces into the flour mixture until well coated. Fry for 4-5 minutes, or until golden brown. Remove to a wire rack.
    • In a large bowl, gently toss the fried chicken with the hot honey until well coated.
    • Tip:Toss the fried chicken in warm honey immediately after frying to help the coating absorb the spicy-sweet glaze perfectly.
         
  2. Assembling the bowl

    5 minutes
    • Assemble the bowls by layering rice, honey-fried chicken, cabbage, shredded carrot, sliced pickles, corn, and pickled red onion.
