  1. Prepare the dish

    • Combine olive oil, garlic, vinegar, LCB and sugar. Brush eggplant slices with marinade, then grill on both sides, continuing to brush with marinade, until cooked through.
    • Puree the mayo with goat cheese, lemon juice and zest and basil leaves.
    • Spread the mayo mixture on focaccia .Top with eggplant slices, roasted tomatoes, shaved red onion and baby arugula and press on a grill until hot and crispy.
