Ingredients per serving

Mango Pico:

  • Large mango, ripe, small dice 1.0 piece
  • Small Roma tomatoes, small dice 2.0 pieces
  • ½ Small Red Onion, small dice
  • ½ Bunch Cilantro, chopped finely
  • Medium Jalapenos, small dice 2.0 pieces
  • Limes, juiced 1.5 pieces
  • Olive oil 2.0 Tbsp
  • Red wine vinegar 1.0 Tbsp
  • Salt and pepper to taste

Raw Pickled Herring Skewers – Flamebroiled:

  • 10 filets of fresh herring
  • Caster Sugar 15.0 g
  • Vinegar Powder 15.0 g
  • Sea Salt 5.0 g

Preparation

  1. Mango Pico:

    • Dice all ingredients.
    • Mix together in a bowl and refrigerate.
    • Toss before serving.
  2. Raw Pickled Herring Skewers – Flamebroiled:

    • Add the sugar, vinegar powder, and sea salt to a spice mill/mixer and blend to a fine powder.
    • Add the powder to the meaty side of the herring filets, and let it marinate in the fridge for at least 4 hours.
    • Flamebroil the filets on wooden skewers on the grill or with a burner and serve with spicy sauce.
