  1. Preparing the soup

    • Add bacon to a large pot over medium-high heat. Cook bacon until crispy, about 7-10 minutes, then set aside.
    • Leave the grease in the pot. Add onion and celery and sauté for 5 minutes.
    • Stir in the flour and cook for about a minute, stirring nearly constantly.
    • Add in the garlic, followed by the prepared Knorr® Professional Ultimate Chicken Bouillon Base. Stir to ensure that the flour has dissolved and that any bits of food stuck to the bottom of the pot are scraped up.
    • Next, add the chicken, corn, cream, potatoes, Italian seasoning, cayenne pepper, and 3/4 of the bacon (save the rest for garnishing the soup). Increase the heat to high and bring the soup to a boil. Once it's boiling, reduce the heat to a rapid simmer, making sure that the pot is covered with the lid slightly open. Cook the soup until the potatoes are tender, about 15-20 minutes. Stir the soup occasionally and note that it will get thicker as it cooks.
    • Serve by garnishing each bowl with the remaining bacon and chopped scallions.
