Preparation

  1. Prepare the chili

    40 minutes
    • Heat the oil over high in a large heavy pot and add the onions, garlic, red pepper, celery, jalapeño, oregano, bay leaves, chili powder and cumin. Stir for 5 minutes stirring occasionally. Then remove from pot and set aside.
    • Add the ground beef to the pot. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
    • Add the previously cooked vegetables and spices back to the pot. Also, add the tomatoes, prepared beef broth, salt and pepper to taste. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
    • Add the drained beans and cook, stirring occasionally, for 10 minutes longer.
    TIP: Replace the ground beef with ground turkey for a heart healthy alternative.
  2. Serve

    • Serve in bowls with corn chips, cheese, and sour cream. Add green onion for garnish.
    TIP: Get creative with the toppings! Try adding oyster crackers, hot sauce, or avocado slices.
