Preparation

  1. Prepare The Mole Gravy

    • In a medium saucepan, follow Low Sodium Chicken Gravy instructions.
    • Add the Mexican chocolate, cinnamon, cumin, garlic powder, and onion powder.
    • Stir continuously until the chocolate is fully melted and the sauce thickens to a gravy-like consistency.
  2. Prepare the Enchiladas

    • Preheat your oven to 350°F (175°C).
    • In a large bowl, mix the shredded chicken, 1 cup of the cheese, onions, and refried beans.
    • Pour a small amount of the mole gravy into the bottom of a large baking dish to prevent sticking.
    • Lay out the tortillas and evenly divide the chicken mixture among them. Roll each tortilla and place it seam-side down in the baking dish.
    • Pour the remaining mole gravy over the enchiladas, ensuring they are well-covered.
    • Sprinkle the remaining cheese on top.
  3. Bake

    • Cover the baking dish with aluminum foil and bake for 20 minutes.
