Preparation

  1. Prepare the shrimp

    • In a medium-sized bowl, combine peeled and deveined shrimp with spices and vegetable oil. 
    • Cover with plastic wrap and refrigerate for at least 15 minutes. 
    • For best results, marinate the shrimp for 2 hours. 
    • Place a large cast-iron pan over high heat. 
    • Once smoking hot, add the marinated shrimp and cook until charred on one side and opaque almost cooked through on the other, about 5 minutes. 
    • Flip briefly to ensure thorough cooking, then transfer the shrimp to a plate to cool completely.
    • Once cooled, finely chop the shrimp, draining off any excess liquid. Store covered in the refrigerator until needed.
  2. Prepare Zip Zip Sauce Featuring Hellmann's

    • In a medium-sized mixing bowl, combine Hellmann's mayonnaise, spices, salt, sugar, hot sauce, and Worcestershire sauce. 
    • Cover and refrigerate for at least 15 minutes to allow all the flavors to meld.
  3. Assemble Sandwich

    • In a mixing bowl, combine the finely chopped, charred shrimp with the Zip Zip Sauce Featuring Hellmann's, pickled jalapenos, onions, and lemon juice.
    • Place a large cast-iron pan over medium heat. Spread a thin layer of mayonnaise on one side of each piece of bread, then place one of the pieces in the preheated pan, mayonnaise side down.
    • Add one slice of Monterey Jack cheese to the bread in the pan, followed by two tablespoons of shrimp salad, spreading evenly edge to edge. Top with another slice of Monterey Jack cheese and the other slice of bread, mayonnaise side up.
    • Cook sandwiches for about 5 minutes on each side until golden brown and crispy. Once toasted, transfer the pan to a 350°F oven and cook for an additional 5 minutes until the cheese is melted and gooey.
    • To serve, cut each sandwich in half with a bread knife and serve immediately with additional side of Zip Zip Sauce Featuring Hellmann's for dipping.
