Preparation

  1. Prepare the Roasted Cauliflower Soup

    • Toss cauliflower florets, onion and garlic with olive oil.
    • Roast at 425 degrees for approx. 25 minutes or until lightly caramelized.
    • Combine roasted vegetables with prepared vegetable stock. Bring to a boil and then cut to a simmer for 25 minutes.
    • Blend all using a high-powered blender until smooth.
    • Season with salt, as desired.
