    • In a small bowl, mix all of the peanut sauce ingredients together. Serve the peanut sauce on the side with the chicken satay, along with lime wedges and fresh cilantro for garnish.
  2. Cooking the chicken

    • Mix together all of the ingredients except for the chicken breasts and wooden skewers. Coat the chicken well in the marinade and let it sit in the refrigerator for at least 6 hours (preferably overnight).
    • Heat a grill or grill pan to high heat. Thread each chicken strip onto a wooden skewer and grill for 2-3 minutes per side, or until well browned and cooked through to an internal temperature of 165°F.
    • TIP: Soak the wooden skewers in water to prevent them from burning on the grill.
